Instructions
1. Preheat a pan and sear the pork belly until golden brown
2. Season with salt and black pepper to taste
3. Add the ginger-garlic paste, shrimp paste, and Thai chili; stir for a few minutes
4. Pour in the unsweetened coconut milk and simmer for 5 minutes, or until slightly reduced
5. Add the bell peppers and cook for another 5 minutes, stirring occasionally
6. Serve it with rice and enjoy!
